Whole Fillet
Thank you very much for your 2 beef fillets. I cooked them Saturday evening for my husbands 50th. We ordered beef fillet and rump steaks. Both tasted delicious and the fillet was cut pefectly. My husband would have preferred the rump steak to be bigger and thicker because he loved it so much. It would be great to have the option of asking for thicker cuts.

FOUR BONE RIB
We had an early Christmas dinner with friends and although they had sold out they still managed to find one for me. This is the second time I have brought the same joint and I am not surprised it sells out quickly. We all thought it was succulent and just the best we had ever tasted. Christmas Eve Supper
I always make a formal Christmas Eve supper as we inevitably have a house full. Lovely rich flavour
We immediately noticed the texture and flavour being an improvement from supermarket brisket, and will be back for more. Plenty of fat as well which doubtless contributed to the great taste. But also allowed me to use to make tallow which meant great Yorkshire Puddings and roast potatoes!

Excellent traditional roast
I haven't roasted a beef joint for sometime, as the flavour and composition of many supermarket joints mean it is often dry, tough and flavourless, but they do pot roast more successfully. However, keen to cook a more traditional roast once again I bought a topside joint from Derek Kelly. It was absolutely delicious and so reminiscent of the Sunday roasts my mum made 40 years ago! Wasnt sure how large a joint to buy, so bought 3k and 2k. Select 3k for Xams and it was wonderful. Followed the cooking instructions and it was the star of the show (well actually joint star as I also ordered a Turkey from Kelly's).

The Best Beef I have ever cooked or eaten
For Christmas Day, one of our overseas guests, when asked (big mistake) asked whether he could have traditional roast beef and Yorkshire pudding. So to accompany our Kelly’s Bronze Turkey, I ordered some beef as well. This was simply superb, sure it was cooked to my idea of perfection, (medium rare) but the flavour and tenderness was something special…hence title. Lasagne al forno
I used two packs of your best mince to make this recipe by Mary Berry.
The beef, which was very lean, browned beautifully and the resulting lasagne was delicious!

The mince separated to produce a regular finished dish. It was tender and did not give a lot of fat off during cooking so producing a better dish. used for cottage pie and chilli.

Supreme Mince

Spag Bol Supreme
I only use mince for spag bol and have previously bought best quality organic mince, but nothing compares to this. Deep rich flavour. Even my 10 Year old grandaughter noticed the difference.

Diced chuck steak gives our pies depth of flavour, with rich beef gravy and surrounded in rich short crust pastry. Cook from Frozen in 40 minutes, serve with mashed potatoes and fresh veg for a hearty meal.

Smaller than most beef roasts. Salmon cut is full of flavour and is an excellent roasting joint, and leftovers can be thinly sliced and used for sandwiches. Cook by searing in a hot pan and place in a hot oven (200C) for about 30-40 minutes, should be served pink.

Christmas Salt Beef
I slow cooked it in a marinade of spices in foil and it was succulent and tasty. A lovely pink colour as it should be and very tender. Thank you.
